"Escudella"

A true hearty, comforting stew. "Escudella" is a traditional winter dish made with pork, seasonal vegetables, legumes, and chicken. It is especially popular in January, during festivities like Sant Antoni or Sant Sebastià, when large communal "escudelles" are prepared - a deeply rooted tradition in Andorra. 

Mountain "trinxat"

The ideal combination. Made with potatoes, cabbage, garlic, and pork, this dish instantly transports you to the Pyrenees. It is also very typical from Cerdanya and Alt Urgell. Though it may seem like a simple dish, "trinxat" has its roots in traditional “waste-free” cooking, making the most of every ingredient.

Andorran-Style Trout

Fresh river trout is a staple in the region, thanks to Andorra’s many rivers. It is typically grilled, and the best time to enjoy it is at the start of the fishing season, from May to September. 

Snails "a la llauna"

Grilled with olive oil, salt, "allioli", and a touch of spice, this dish is perfect for mountain cuisine lovers. Though originally a typical dish from Lleida, it is also a well-established tradition in Andorra. The name "a la llauna" comes from the way it is prepared - cooked in a square iron tray. Quince "allioli" is one of its perfect pairings. 

Game meat

Game Meat is one of the typical dishes of the region, usually served with vegetables and mushrooms. The most well-known varieties are civet of wild boar, rabbit, "camussa", and partridge, often stewed and/or cooked with wine.

This is the perfect pairing for grilled meats, especially in autumn, though it’s also used as a spread on bread. It’s a sauce made primarily from quince, olive oil, and garlic, with apple sometimes added to give it a sweet touch, which contrasts nicely with the game meats typical of the region.
